Cookbooks and recipes always inspire me as I like to cook and bake.Felicia Slattery did it again in her new Plant-Based Instant Pot Cookbook – 80 Whole Food, Plant-Based Diet Recipes Made Quick and Easy! This is her second cookbook in one in a year; the first being: Plant-Based Slow Cooker Cookbook – 100 Whole-Food Recipes Made Simple.Felicia’s cookbooks stand out to me not with fancy eye-catching glossy photos but her genuine descriptions, guidance, and special attention to anyone – like myself – not adhering to a strict plant-based diet. And, living alone, I don’t have an Instant Pot. But I quickly realized, Felicia talks to us all! She so well explains what plant-based diet involves and offers clarity of various terminologies.I relish the bounties of the garden: any type of veggies, fruits, and herbs. However, Felicia adds extra twists to her presentations with various combinations of condiments, herbs, and spices familiar to us to enhance flavors. And she does it with ease and so uncomplicated! It certainly raised my curiosity even more to try her easy cooking approaches.For example, I love stews and soups. But ‘Sweet Potato and Peanut Stew with Kale’ (pg. 57) is an ingredient combination so new to me that I had to try it, though preparing it the traditional way on a stove top absent of an Instant Pot. Of course, it took a bit longer as described but I don’t think at the cost of the flavor: it was DELICIOUS and a so easy-to-follow recipe.Lastly, I must add that I was so stimulated by Felicia’s simple and so clear explanations with practical hints of using an Instant Pot throughout the book that I am even shocked that this week I invested in a small one. The irony is that I have been downsizing drastically the last few years as I live alone and am turning 80 years this month. But the love of cooking and tasting new things never left. I truly enjoy both of her books and wealth of healthy recipes.
